It’s getting to that time of year when things get a little spook-ay. Well, whether you take part in the Halloween and Thanksgiving traditions, or you just love a healthy and delicious dessert for the holiday season – have a try of my Sweet Pumpkin Pie.
Pumpkin is one of my favourite vegetables. The colour is brilliant, it’s a low calorie, nutrient dense and delicious vegetable. Pumpkin always reminds me of sitting down to winter roasts with my family when I was growing up. It’s a lot more than just a one-roast wonder though. Pumpkin has a sweet side that’s great for those looking for a nutritious and satisfying after dinner sweet treat.
Pumpkin is a feel good food. It contains vitamin A (eye health), zinc (immune boosting) and potassium (heart health), fibre, vitamin C (immune boosting), and the list goes on. So it really does pack a big nutritional punch.
