Pesto Pasta with Chicken

  1. Heat the ghee in a pan, add garlic and then chicken.
  2. Once sealed, turn the heat down and cover while pasta cooks.
  3. If you’re using zucchini noodles: prepare 2 raw zucchinis per person with a spiraliser and set noodles aside.
  4. If you’re using pasta: bring a saucepan to the boil, add pinch sea salt and packet of pasta, once boiling.
Recipe Notes

I used mung bean pasta for this recipe which is a lower-carb, gluten-free alternative. You could use regular pasta or zucchini noodles if you need a low FODMAP or Paleo option.

Always opt for organic ingredients where possible.
