Omelette with Fresh Basil Pesto

  1. Break eggs into a bowl, add pesto and mix.
  2. Bring a frying pan up to moderate heat with a little ghee or coconut oil in it.
  3. Throw handful of spinach into pan.
  4. When spinach begins to wilt, throw egg mix in over the top.
  5. Turn heat down and cover until eggs cook through.
  6. Flip and serve on plate with a wedge of avocado.
