‘Tis the season for barbecues, parties and family gatherings. Everyone’s looking for a bit on the side at this time of year, when it comes to food (dips, condiments, side salads). So it’s important to have a few dishes in your repertoire to pack or plate. This Mango Guacamole offers crowd-pleasing twist on the original recipe.
This is a great summer version of guacamole. It’s mango season in Australia over summer so they are easy to get your hands on. If you are rugging up in the northern hemisphere at the moment, you may want to substitute with some chopped sweet cherry tomatoes or capsicum (bell peppers) instead. Make this just before serving and store in an airtight container in the fridge.
Serve this Mango Guacamole fresh raw vegetable sticks, dollop on to meat or fish or as a dip with some sweet potato chips.
