Ingredients
Instructions
  1. Put all ingredients (wet and dry) into a bowl and mix well with a whisk.
  2. Place into pre-greased cake or bread tin.
  3. Sprinkle shredded coconut on top.
  4. Bake in low to moderate over (160C) for 45 mins. Check on the bread at about 30 minutes to make sure the top isn’t getting too brown. Turn oven down if it’s beginning to burn.
  5. Once cooked through, remove from oven.
  6. Serve warm or store in air tight container in the fridge and cut up cold.
  7. Serve with some natural or coconut yoghurt and fresh berries as a dessert option.
