This subtly sweet gluten-free bread for those afternoons when you want something sweet without the guilt. It also makes a delicious and easy breakfast. Spread on a little grass fed butter, a little nut butter, some extra fruit or enjoy it alone with a cup of tea. As a nut-free loaf, this is suitable to throw in the children’s lunch boxes too.

- 1 C Buckwheat flour For a Paleo version use almond meal
- 1 C Shredded coconut
- 3 Eggs
- 3 tbsp Coconut Oil At room temperature
- 1/4 C Chia seeds Soak in a little water until they gel up - should take about an hour
- 1 pinch Himalayan sea salt
- 1 tsp Baking powder Allergy friendly
- 1 Organic banana Mashed
- 1 tsp Raw honey, stevia or other sweetener Optional. If you want a sweeter loaf

- Put all ingredients into a mixing bowl and combine until the mixture is thick and a little sticky.
- Pour mixture into a loaf tin lined with baking paper.
- Bake in the oven at about 150 degrees C for 30-40 minutes or until it has browned and a knife comes out clean.
- Remove from oven and transfer to a board or cooling rack.
- Serve warm or store in the fridge wrapped in baking paper. Cut into pieces and wrap individually if freezing.
This recipe is gluten free + wheat free + refined sugar free + low FODMAP (when eaten in moderation) + vegetarian
