The other day a friend asked me what I did with all those left over part-bunches of herbs laying on the shelf in the fridge crying out for attention. Whip up some fresh, delicious, raw, powerfully green pesto of course. So here you have it; my Fresh Basil Pesto with a twist.
Homemade pesto really acts as a magic wand over a simple dish. It’s a great way to entice the green-resistant eater to get some of their daily serve. It’s also diverse, quick to make, doesn’t require any cooking and an all around crowd pleaser.
Many of us will remember the days of the chicken pesto pasta main, dripping in oil and cheese. Well, pesto has grown up since the 90s, it’s put its big boy pants on. Put plainly: it’s a bit more fancy these days.
This is one version of a dish that like a good pair of jeans can pretty much be dressed up for any occasion. I use pesto as a dip, a pasta or zoodle sauce, with eggs, on meat, in homemade burgers, as a spread. The list really is endless. It’s particularly handy for the raw foodie and coeliacs who often struggle to find great, clean condiments to dress up a meal.
