I call this a Detox Salad because it’s extremely alkaline, simple, clean and refreshing. The kale, fennel and cucumber are great for eliminating toxins from the body. Dill and mint are good as internal cleansers and for aiding digestion too. This is a go-to salad for summer or getting back on track after too many foodie indulgences while travelling.
Eat this on its own for lunch or dinner with a little fish or as a side with our Healthy Chicken Meatballs. You could also dress this with our Creamy Tahini Dressing.

- 2 Bulb Fennel Finely sliced
- 1.5 C Kale or baby spinach Be careful with raw kale if you have a sensitive gut and make sure you regularly rotate your greens.
- 2 Lebanese cucumbers Diced
- 2 tbsp Fresh dill Finely chopped
- 2 tbsp Fresh parsley Finely chopped
- 1 Pinch Himalayan sea salt
- Black pepper To taste
- 2 tbsp Extra virgin olive oil
- 2 tbsp Apple cider vinegar Choose organic with mother
- 1/2 Lemon

- Toss and dress with fresh lemon juice and Apple Cider vinegar and some organic olive oil (alkaline) or Balsamic and olive oil (less alkaline)
